This is one of my favorite recipes off Recipetineats to make for a friend or as a pick me up. The recipe is a Vanilla sponge cake! It is delicious right out of the oven but also great days later. This recipe is also delicious with or without icing or buttercream. It is good for four days and won’t crumble. Here’s the recipe:
Ingredients:
Batter:
2 cups plain / All purpose flour
2 ½ teaspoons baking powder
¼ teaspoon cooking salt
4 large eggs
1 ½ cups caster / superfine sugar
115g or ½ cups of unsalted butter
1 cup milk
3 teaspoons vanilla extract
Vanilla Buttercream:
225g or 2 sticks unsalted butter
500g 1lb soft icing sugar or powdered sugar
3 teaspoons vanilla extract
2-4 tablespoons milk
Preheat the oven to 180c or 350F
Put rack in the middle of oven
Grease 2x20cm / 8 inch pans with butter then line with parchment paper
Dry ingredients:
Whisk your 2 cups of flour, 2 cup ½ tsp baking powder, and ¼ tsp salt together in a large bowl.
Eggs:
Then beat your eggs on speed six or medium speed for 30 sec. After slowly add your 1 cup ½ tsp sugar as the beater is still going over the course of 45 sec. Then beat for 7 min on high speed or 8 speed until tripled in volume and white.
While the eggs are beating, heat the 1 cup milk and ½ cup butter for 2 min to melt butter. When the eggs are whipped, scatter ⅓ flour on the surface of the eggs and beat on speed 1 or low speed for 5 sec. Add half of the remaining flour and mix on low speed or speed 1 for 10 sec. Once you cannot see the flour stop. Pour the hot milk, vanilla and oil into the empty flour bowl.
Turn beater on low speed or speed 1 and slowly pour milk mixture into the egg batter over 15 seconds, after turn beater off. Scrape sides and beat for 10 sec or until smooth.
Bake:
pour batter into tins and knock the pan against the counter 3 times to get bubbles out. Put in the oven and bake for 30 minutes or until golden brown and a toothpick inserted comes out clean.
Buttercream:
Beat butter on high speed for 3 min until it changes to almost the color white and becomes fluffy and creamy. Then add Icing sugar or powdered sugar gradually in 3 sections, Beat slowly. After, beat on high speed for 3 min until fluffy. Add vanilla and milk and beat for 30 sec. Use milk only if needed to make it soft but still hold its form. Use immediately.
Cool and Frost:
After taking out of the oven let it cool for 15 min then turn out onto cooling racks. Once cakes are cooled, frost cake or cream or eat right away.
