From the Recipe Book: Overnight Pumpkin Oats

If you’re looking for something warm and filling as the mornings get cooler, this one is a great fit. It will come out looking like the picture and your house will smell amazing all morning. Heads up though, before starting you will need a slow cooker.

Ingredients:

  • 4 cups water
  • 2 cups milk (I like to use Almond Milk)
  • 1.5 cups steel cut oats ( don’t substitute rolled oats, this will turn into mush)
  • 3 tablespoons ground flaxseed
  • 1 tablespoon ground cinnamon
  • 1/4 cup maple syrup (you can substitute another sugary product, but this one really hits the fall spot)
  • 1 can pureed pumpkin

Directions

  1. Pour everything directly into the slow cooker, starting with the liquids. Mix well with a spatula.

2. Turn the slow cooker to LOW, and let it sit overnight. The original recipe calls for 6-7 hours, but I’ve left it for up to nine with no issue.

3. In the morning, unplug, mix, and scoop. Add chopped walnuts for blended texture.
